Prepared with exquisite slices of chile poblano, corn kernels, and panela cheese filling. Bathed with a creamy poblano sauce and accompanied with refried beans, this omelette is very popular throughout Mexico. But at Fredy’s Tucan we created our own version by adding fresh panela cheese, which is produced locally. Panela cheese is a fresher type of cheese that only takes a few days to be made.
The poblano peppers are similar to the bell peppers, but they tend to be a bit hotter and are commonly used to prepare stuffed peppers. They have a dark green color and a juicy, tasty skin.
Try a new approach to the ordinary omelette and bring your breakfast to a new level.
Fun Fact: Poblano peppers take their name after the Mexican state of Puebla, which is a Mexican state where they are commonly cultivated and used in popular meals like stuffed peppers. Poblano peppers are also known as ancho peppers and they are rich in potassium, iron, and vitamin B-6.
