Fried or scrambled eggs bathed in a red sauce with pressed pork and panela cheese on top. Accompanied with refried beans and guacamole. Pressed pork is a type of pork rind but it actually has meat in it, not just the skin. This pork and the red sauce really add a superior flavor to the eggs. It is definitely the kind of breakfast you can’t pass on.
The refried beans and guacamole are the perfect partners to the San Sebas eggs. People up in the mountains of San Sebastian are used to this type of culinary pleasure.
Fun Fact: Although pork rinds are not originally from Mexico, in modern Mexico we eat a lot of pork and pork rinds in particular. Here they are called chicharrones and you can find them at almost any butcher shop. There are many types of chicharrones, but the ones that have more meat in them are more expensive and take a lot longer to cook. We add these greasy wonders to a lot of our meals, especially tacos and corn quesadillas.
