Talpa Eggs


Two scrambled eggs mixed with bacon over a fried corn tortilla, bathed with green sauce, and melted panela cheese on top accompanied with refried beans.

The scrambled eggs are placed over a mildly fried tortilla, then the green sauce and panela are added.  The smell of the bacon will get your appetite going before you take the first bite.  Not only does the dish taste good, it also looks good on the plate.  The green salsa has green peppers, cilantro, and a bit of tomatillo, that’s where it gets its particular green color.  Be ready to experience an explosion of flavor and a new way to eat them scrambled.

Fun Fact: The molcajete is a concave grinding stone where some of the best salsas are made.  Molcajetes are cut and sculpted by artisans and they come from volcanic rocks mostly.  A truly Mexican kitchen has to have a good molcajete, which is made of two pieces.  Molcajetes are also great for decor in your kitchen and they come in all kinds of sizes.
