Two fried eggs bathed in ranchera sauce, mounted on a thick slice of ham with melted Chihuahua cheese on top, accompanied with our delicious refried beans.  The ranchera sauce is made with boiled tomatoes, onions, and serrano peppers which are mashed up at a special grinding stone. Garlic, salt, and cilantro are added to the sauce as needed.   This tropical-style breakfast is as fresh as a recently picked lettuce.  The Chihuahua cheese is a great complement, this rich and creamy cheese is made in North Mexico by the Amish settlers whom we call “mennonites.”

The smoked ham we use is just as good as it gets, it has that sweet smoky flavor that’ll make you eat every piece of it.  Enjoy it by itself or dip it in the ranchera sauce.

Fun Fact:  As in most Western countries, cheese is very popular in Mexico.  We have our own types of cheese which we love to use in our food.  Mexico has its own kinds of cheese, here I give you the names for you to try them the first chance you get.  Queso fresco, panela, Chihuahua cheese, cotija, requesón, Oaxaca, and manchego mexicano.  How could we make a good quesadilla without cheese?
