We are talking about an ancestral meal, its origin dates back to many years before the Spaniards set their feet on our lands. It is undoubtedly one of the most representative dishes of Mexican culture. Its recipe was practiced by the Mayas, Aztecs and Otomis. Do you want to know more about this interesting Mexican dish? Its origins

It is known for certain that the Mixiote recipe is hundreds of years old, it was prepared by the natives of the southern Mexican Anti-Plains; the territory of the Anahuac Valley and the Huasteca Hidalguese, and includes the states of Queretaro, Hidalgo, Mexico, Morelos, Tlaxcala and Mexico City, where it is popular to raise sheep and the cultivation of maguey, the main ingredients used to prepare this dish.

The name comes from the Náhuatl metl, which means maguey, and xiotl, film or membrane of the penca, the other unique and special ingredient in the recipe, which many civilizations already used by steaming it.

The legend says that the first Spaniards to taste this traditional dish were the Duchess Catalina de Aragón y Montealbán, together with her husband Don Carlos Arsillaca y Albarrán, at a special banquet that the natives of the Huasteca hidalguense had prepared for them. The Spaniards fell in love with its flavor to such an extent that they made it popular throughout the territory.

How is Mixiote prepared?

The recipe consists in the preparation of enchilada meat wrapped in a thin film of maguey stalk that is steamed. It is usually prepared with lamb and mutton, but you can also find it made with beef, chicken, rabbit or even squirrel. It can be served with potatoes and nopales.

Some curious facts about Mixiote

Although the original recipe is prepared with the membrane of the maguey stalk, nowadays it is more common to make it with wax paper or aluminum foil, since the maguey is a protected species and its commercialization is prohibited.
