Huevos rancheros are fried eggs on a fried omelette and are covered in a special sauce. The watery sauce used for these eggs has onion, tomato, a little oregano and hot chili. They are accompanied by refried beans that are traditionally cooked with butter, this gives them a particular and original flavor. We usually sprinkle dry cheese over our beans to make them perfect.
