This inviting option has two perfectly poached eggs served on fried tortillas with chorizo, bathed with a bean chipotle sauce and topped with panela cheese, accompanied with guacamole.

If you haven’t tried chorizo yet, this is your best chance.  Chorizo with eggs always makes a good deal, especially when you use quality chorizo like we do.  The good chorizo has a great smell, it also has to have just the right amount of fat to be cooked without adding oil or lard.  It should cook in its own fat.  Even before you eat it you’ll go mmm…

Fun Fact: The comal is a flat metallic disk used to cook tortillas, roast peppers, and toast spices and nuts.  This type of griddle is essential in every Mexican kitchen, but the good ones have to be kind of big so you can heat many tortillas at once.  A thick comal also retains the high temperature with a small flame.
